Quintessence is a raw food restaurant. For those of you who don't know, yes, this means that nothing is cooked. Everything is raw.

Quintessence offers a wide selection of everything from salads to Indian and Mexican food. On this trip, we got to try four different meals and two appetizers. The nachos are fantastic. I highly recommend them!

Quintessence is not only vegetarian, but vegan as well. So if you're feeling the pressure to find a good raw or vegan restaurant, Quintessence is a great bet. The one disclaimer I have to offer is that the food can be a bit heavy. When some of the dishes are mainly nut based (with nut- "bread", "cream", "meat") it can be a bit heavy. But the taste is absolutely delicious.
